Curried almonds are a favourite with our guests. They go out with the sherry before dinner!
Whisk egg white with spices. Add almonds and stir to coat. Butter a large cookie sheet. Spread coated almonds on the cookie sheet and bake in 325°F oven, until lightly toasted, turning almonds now and then to prevent sticking and to even out toasting. Allow to cool thoroughly before storing.
We serve these with sherry or cocktails or just for a fast nibble. They can be made well in advance and kept fresh in a sealed bottle. If you prefer a spicier version, increase the amount of curry. What a great hostess gift when prettily wrapped!
