Always a breakfast favourite. Not too sweet, but really yummy when warm.
Ingredients
1 c flour, white
1⁄2 c flour, whole wheat
1 t baking powder and baking soda, each
1 t salt
1⁄2 c sugar
1 egg
1⁄2 c butter, soft
1 orange, including rind, quartered
1⁄2 c orange juice
1⁄2 c dates, chopped
Instructions
Mix first six dry ingredients in a bowl. Put egg, butter, orange, and orange juice into a food processor and combine until smooth. Add to dry ingredients, along with dates and stir to mix.
Pour into greased muffin pans and bake at 400∞ for 15-17 minutes.
